Nihari, the slow one

Nihari is patience on a plate. It’s simmered for hours until the meat turns meltingly tender and the gravy goes deep, dark and rich with spice. Traditionally a morning dish, it’s the kind of thing that anchors a whole table — warm, filling, and best mopped up with fresh naan or paratha.

 

Building your thali

  • Nihari — the slow-cooked centerpiece, rich and spiced.
  • Halwa Poori — sweet halwa and puffed poori for balance.
  • Qeema — spiced minced beef to round out the savory side.
  • Karak Chai — strong, milky and non-negotiable.

 

The order you eat it in

There’s no wrong way, but there is a Burns Road way. Start with a little sweet halwa to wake up the palate, move into the nihari and qeema while they’re hot, tear off paratha as you go, and let the karak chai carry you between bites. Slow down. That’s the whole point of the weekend.
